Good call on the cheese, Nil, and roasting the potatoes with the seasonings sounds like a great improvement.

The instructions and the picture for this recipe don't agree.

The instructions say, "Place about 1/2 cup potatoes alongside quarter of pork mixture on each plate, then crumble quarter of cheese over top before serving" which does sound as if the cheese goes over the potatoes. The picture, however, shows the cheese as being over the pork mixture. That's how I made it, and the cheese quickly melts and combines with the paprika flavored juices to make a creamy sauce. Which we all promptly stirred the really very boring potatoes into.

The next time I made it, instead of tossing the hot cooked sliced potatoes in the oil, I tossed the raw cubes of potato in the oil and seasonings and then roasted them in the oven. A bit of browning makes them MUCH better. And we doubled the garlic content.

The last time I made it, I used ground turkey (in respect of a guests religious requirements). Lowered the fat content and cost and tasted pretty much the same.

To make it more yummy, you can sub in butter instead of oil, and to make it more moist, you can throw in any left over sour cream or plain yogurt (about 1/4 C per loaf) if you've got any.

Hope you have better luck the second time. I'm sure your husband will like it even more when he can taste the cheese.

You are right. Thanks Jessica. I didn't notice a real cheesy flavor but I ended up having to dilute the chowder more because I added too much cayenne pepper. My husband thought it was pretty good but I want to try it again the right way. :o)
